Recipe Serves 4
500g 'trim' lamb, round, topside or shoulder
4 teaspoons peanut oil
1 large brown-skinned onion, chopped
1 clove garlic, crushed
8 teaspoons Thai green curry paste
1 cup coconut milk
½ cup chicken stock
1 5-cm stalk lemon grass, thinly sliced
2 teaspoons finely chopped coriander roots
3 tablespoons coriander leaves
1 cup sliced green beans
Fresh coriander sprigs for ranish

With a sharp knife, cut the lamb into 3-cm cubes.
Heat oil in a heavy-based pan or flame-proof casserole dish over a medium heat. Add lamb and fry until browned and sealed on all sides, stirring frequently with a wooden spoon. Transfer lamb to a plate, using a slotted spoon.
Add onion and garlic to pan; gently fry until onion is soft, stirring often. Add green cury paste and stir-fry for 2 minutes.
Add coconut milk, stock lemon grass and coriander roots. Bring to the boil, stirring continuously. Return lamb to pan, cover and simmer over a low heat for 25 minutes. Add coriander leaves and green beans and simmer, covered, for a further 5 minutes or until lamb is tender.
Serve immediately, garnished with fresh coriander sprigs.

To save time, chop the onion in a food processor. Stop and scrape down the sides with a spatula or knife, then mix again for even chopping.

Lemon grass is a traditional flavouring in Thai cooking. Choose fresh, tender lemon grass. Old lemon grass will have dry stalks. Peel skin before use.
