Recipe Serves 4
4 boneless sirloin steaks (125g each), 1cm thick, trimmed
2 teaspoons vegetable oil
1 clove garlic, crushed
8 teaspoons 'lite' cream cheese
8 teaspoons low-fat reduced salt cottage cheese
2 tablespoons snipped fresh chivesor chopped spring onion/shallot tops
teaspoon freshly ground black pepper

To prepare the garlic topping, in a small bowl, combine the garlic, cream cheese, cottage cheese, chives and pepper. Using a fork, mix the ingredients unnill they are smooth. Set the topping aside.
Rinse steaks and pat dry with kitchen paper towels. In a large non-stick frying pan, heat oil over a medium-high heat. Add steaks and cook, turning once, for 2 to 3 minutes per side for medium-rare, or 3 to 5 minutes per side for well done.
Using a fish/egg slice, place the steaks on individual dinner plates. Immediately top each one with about 1 tablespoon of the topping. The garlic topping will melt slightly. Serve steaks immediately.
Variation
To grill steaks, preheat the grill. Prepare topping as directed in step 1 (above). Place steaks on grill rack in grill pan. Grill 10cm from the heat, turning once, for 3 to 4 minutes per side for medium-rare or longer for well done. Serve as directed in step 3 (above).

Sirloin steaks are a lean beef choice. Because there is a little muscle fibre to break down, a quick saute is all that's needed for a tender result.

To prepare chives, snip them into desired lengths with kitchen scissors instead of cutting them with a knife. A knife could crush the delicate herb.
