Recipe Serves 4
4 single chicken breast fillets, 125g each
8 thin spring onions/shallots, cut in 2cm lengths
½ small red capsicum, cut in julienne strips
6 sheets filo pastry
Juice of 1 orange
4 teaspoons olive oil
4 teaspoons lime or 4 extra teaspoons orange juice
Freshly ground black pepper
4 teaspoons butter or margarine, melted

Preheat oven to 180. Spray a baking tray with olive oil cooking spray. Trim fat and cartilage from chicken; score the top of each breast. Prepare vegetables.
Lay filo on a piece of greaseproof paper; cover. (See Cook's Tip 1.)
Place 2 filo sheets on a clean, dry work surface, brush lightly with orange juice, then cover with another sheet of filo. Brush with more juice. Using kitchen scissors, cut filo in half, or into a square, using perforations.
Place a chicken breast in centre of each filo square. Sprinkle with half vegetables. Pour 1 teaspoon olive oil and 1 teaspoon juice over each chicken breast and sprinkle with pepper. Enclose securely in filo pastry.
Place each parcel, seam side down, on baking tray; brush with melted butter. Repeat with remaining ingredients. bake for 15 minutes, until filo is golden. Serve immediately.

Cook's Tips

To prevent filo drying out and tearing, always keep it covered with greaseproof paper, then a clean, damp teatowel. Work quickly when using filo.

To enclose the chicken and vegetables fold the top of the filo over, fold the sides in, then roll up the remainder, pinching the pastry together.
