Recipe makes 3 litres (with ice)
2 cups of mango puree (about 2 mangoes)
2 cups freshly squeezed orange juice
3 cups canned pineapple juice
Juice of 1 lemon or 2 limes
1 cup of cold tea
1 300ml bottle dry ginger ale
1 tray ice cubes
Sliced orange, mango cubes, pineapple cubes, sliced strawberries and sprigs of mint for decoration

Place mango puree, orange, pineapple and lemon juice in a large punch bowl or glass jug. Stir to mix well. Cover and chill the punch in the refridgerator for at least 2 hours.
Chill tea and ginger ale well in the refridgerator.
Just before serving, remove fruit mixture from refridgerator and add ginger ale and tea. Mix well. Add ice cubes and preapred fruits.
Serve punch in tall glasses. Spoon a mixture of fruits into each glass and decorate with mint leaves. Serve immediately.
Variation
Replace mango puree with apple jiuce or canned apricot puree. Replace dry ginger ale with soda water. Try using herb tea in place of regular tea, For an alcoholic punch, add ¼ cup white rum and ¼ cup peach brandy or brandy, but remember to use plenty of ice. For a sparkling punch, add 1 bottle champagne or cider.

After sqeezing citrus fruit, remove pips with a teaspoon and discard, but add citrus pulp to juice to add fibre to the punch.

To decorate punch glasses, slice lemons and oranges thinly and cut into centre of slice. Dip into lightly whisked egg white, then caster sugar, chill before use.
